Go the the Sametime preferences under Chat History and check the local folder setting. This should be a local (non-networked) folder that you have write access too. Seems as if you have write access because 'open with' works, but it may be a UNC path listed there for a folder. Alternatively, you can save to your mail file instead.

Let me know if that helps. It resolved the issue for the 1 user we had with the same problem.
